Mascarpone torta
Sastojci za biskvit:
3 jaja
50 g mljevenih oraha
50 g preprženih i samljevenih badema
50 g suhih smokava (opcija)
80 g šećera
125 g maslaca sobne temperature
100 g brašna
1,5 žličice praška za pecivo
korica jedne naranče
2 žlice ruma
prstohvat soli
Preljev za biskvit:
sok jedne naranče
1 vanillin šećer
Krema:
400 g mascarpone sira
sok jedne naranče
200 ml slatkog vrhnja
1 vanillin šećer
5 listova želatine
100 g šećera u prahu
Krokant:
100 g šećera
100 g badema
Priprema:
Pjenasto izradite maslac sobne temperature sa šećerom, dodajte jedan po jedan žumanjak dok sve ne postane fina krema. Dodati mljevene orahe, bademe i nasjeckane suhe smokve (ako želite), brašno s praškom za pecivo, koricu naranče, rum i prstohvat soli. Sve sjedinite.U jednoj zdjeli izmiksajte bjelanjke u čvrsti snijeg i lagano ih špatulom umiješajte u pripremljenu smjesu. Ne koristite mikser.
Pripremite kalup promjera 22 - 24 cm. Obložite ga papirom za pečenje. Ulijte smjesu u kalup.Upalite i ugrijte pećnicu na 175 C. Pecite biskvit 20 minuta (svakako provjerite čačkalicom da li je gotov). Ohladiti.Ohlađeni biskvit preliti preljevom: pomiješati sok naranče i vanilin šećer, zagrijati u lončiću kratko dok se ne otopi šećer i preliti preko biskvita.
Namočite list po list želatine u zdjeli hladne vode. Sok od naranče staviti u mali lončić s vanilin šećerom i zagrijati na vatri. Ocijediti želatinu od viška vode i rastopiti u toplom soku od naranče.
Izraditi Mascarpone sir kratko, mikserom i umiješati ohlađeni sok od naranče. Sjediniti.
Istući slatko vrhnje u čvrsti snijeg i dodati mu pri kraju šećer u prahu. Umiješati žlicu po žlicu slatkog vrhnja u kremu od Mascarponea. Sve lijepo sjediniti u kompaktnu kremu (možete i mikserom, ali na manjoj brzini).Kremu ravnomjerno namazati preko bisvita. Ohladiti najmanje 6 sati.
Za krokant, pripremite jedan masni papir za pečenje na kojem će se krokant hladiti.U tavu s debljim dnom dodajte šećer i otopite ga na vatri, bez miješanja. Kada dobijete svijetlu boju karamela dodajte bademe. Isključite vatru, ali bademe nastavite miješati dok ne počnu fino mirisati (maksimalno dva minuta). Smjesu istresite na pripremljeni papir i poravnajte koliko možete. Ohladite. Ohlađeni krokant usitniti u multipraktiku. Posuti po vrhu ohlađene torte (možete i stranice).

Mascarpone torta
Sastojci za biskvit:
3 jaja
50 g mljevenih oraha
50 g preprženih i samljevenih badema
50 g suhih smokava (opcija)
80 g šećera
125 g maslaca sobne temperature
100 g brašna
1,5 žličice praška za pecivo
korica jedne naranče
2 žlice ruma
prstohvat soli
Preljev za biskvit:
sok jedne naranče
1 vanillin šećer
Krema:
400 g mascarpone sira
sok jedne naranče
200 ml slatkog vrhnja
1 vanillin šećer
5 listova želatine
100 g šećera u prahu
Krokant:
100 g šećera
100 g badema
Priprema:
Pjenasto izradite maslac sobne temperature sa šećerom, dodajte jedan po jedan žumanjak dok sve ne postane fina krema. Dodati mljevene orahe, bademe i nasjeckane suhe smokve (ako želite), brašno s praškom za pecivo, koricu naranče, rum i prstohvat soli. Sve sjedinite.U jednoj zdjeli izmiksajte bjelanjke u čvrsti snijeg i lagano ih špatulom umiješajte u pripremljenu smjesu. Ne koristite mikser.
Pripremite kalup promjera 22 - 24 cm. Obložite ga papirom za pečenje. Ulijte smjesu u kalup.Upalite i ugrijte pećnicu na 175 C. Pecite biskvit 20 minuta (svakako provjerite čačkalicom da li je gotov). Ohladiti.Ohlađeni biskvit preliti preljevom: pomiješati sok naranče i vanilin šećer, zagrijati u lončiću kratko dok se ne otopi šećer i preliti preko biskvita.
Namočite list po list želatine u zdjeli hladne vode. Sok od naranče staviti u mali lončić s vanilin šećerom i zagrijati na vatri. Ocijediti želatinu od viška vode i rastopiti u toplom soku od naranče.
Izraditi Mascarpone sir kratko, mikserom i umiješati ohlađeni sok od naranče. Sjediniti.
Istući slatko vrhnje u čvrsti snijeg i dodati mu pri kraju šećer u prahu. Umiješati žlicu po žlicu slatkog vrhnja u kremu od Mascarponea. Sve lijepo sjediniti u kompaktnu kremu (možete i mikserom, ali na manjoj brzini).Kremu ravnomjerno namazati preko bisvita. Ohladiti najmanje 6 sati.
Za krokant, pripremite jedan masni papir za pečenje na kojem će se krokant hladiti.U tavu s debljim dnom dodajte šećer i otopite ga na vatri, bez miješanja. Kada dobijete svijetlu boju karamela dodajte bademe. Isključite vatru, ali bademe nastavite miješati dok ne počnu fino mirisati (maksimalno dva minuta). Smjesu istresite na pripremljeni papir i poravnajte koliko možete. Ohladite. Ohlađeni krokant usitniti u multipraktiku. Posuti po vrhu ohlađene torte (možete i stranice).
