Aluminijska folija je vrlo praktična u kuhinji: zgodna je za zamotati ostatke hrane, zgodna je kao improvizirani poklopac posudama za pečenje, zgodna je za na brzinu napraviti škartoc za pečenje, zgodna je za umoti krumpire, glavice češnjaka ili kukuruz prije nego se zatrpaju u žar, a nekima je toliko draga da njom oblažu pećnicu nastojeći je zaštiti od prljanja.

No sve ove prakse u zadnje su vrijeme pod kritikom onih koji vjeruju da aluminijska folija u hranu može otpustiti opasne sastojke...

Možda ste primijetili da sve više kuhara koje pratite hranu priprema uz pomoć papira za pečenje. Umjesto da škrovadu, skupa s  hranom koja je u nju smještena prekriju folijom, koriste se komadom namočenog i zgužvanog papira za pečenje. Umjesto škartoca za pečenje načinjenog od folije koriste škartoce skrojene od papira za pečenje.

Folija je jako praktična u kuhinji, no koliko je sigurna?

Jedan od razloga za ovakvu promjenu je istraživanje objavljeno u International Journal of Electrochemical Science kojim je utvrđeno da se prilikom pripreme jela koja uključuju zamatanje u foliju komadići folije mogu otopiti i stopiti se s hranom. Neki iznose mišljenje da je pečenje s aluminijskom folijom ipak sasvim u redu pod uvjetom da se ne koriste temperature više od 200 stupnjeva Celzija.

Nažalost, rezultati spomenute studije takav stav ne podržavaju. Prema navedenom istraživanju, folija u hranu može otpustiti čestice aluminija već i kod nižih temperatura, a taj se proces dodatno pojačava kod pripreme kisele hrane. Je li nam onda bolje jela poput ribe u škartocu - koja uključuju i sastojke poput vina, limuna i rajčica, ovisno o receptu - pripremati u škartocu od papira za pečenje?

Evo nove kontroverze. Neki vjeruju kako ni papir za pečenje nije bezopasan, osobito ona njegova glatka strana. Ispušta čestice plastike u hranu, upozoravaju zabrinuto. Sumnjiv im je i zbog toga što se pri njegovoj izradi koriste teške kemikalije.

Ali po svemu sudeći zabrinuti su potpuno neutemeljeno. Tvrdnja o mikroplastici nije dokazana, štoviše u većini slučajeva za sporni glatki sloj koriste se silikoni, a ne plastika. Po pitanju kemikalija, pak, predvladava mišljenje da nema razloga za zabrinutost jer se koriste na samom početku procesa proizvodnje pa do njegovog završetka iščezavaju.

Dok neko novo istraživanje ne pokaže suprotno, slobodno se koristite papirom za pečenje bilo kao podlogom, omotačem ili poklopcem.

Foliju bismo, savjetuje se, trebali oprezno koristiti čak i za čuvanje hrane jer kiselkaste namirnice mogu nagristi aluminij, a osim toga, zamatanjem u aluminijsku foliju ne osiguravamo namirnice od dotoka zraka, što znači da nisu zaštićene ni od bakterija koje mogu uzrokovati kvarenje, ali i trovanje hranom.

Što se pak tiče gore spomenute cake s oblaganjem pećnice folijom, zaboravite i nju. Nema veze sa štetnim kemikalijama nego s pećnicom. Mogla bi se pokvariti.

Aluminijska folija je vrlo praktična u kuhinji: zgodna je za zamotati ostatke hrane, zgodna je kao improvizirani poklopac posudama za pečenje, zgodna je za na brzinu napraviti škartoc za pečenje, zgodna je za umoti krumpire, glavice češnjaka ili kukuruz prije nego se zatrpaju u žar, a nekima je toliko draga da njom oblažu pećnicu nastojeći je zaštiti od prljanja.

No sve ove prakse u zadnje su vrijeme pod kritikom onih koji vjeruju da aluminijska folija u hranu može otpustiti opasne sastojke...

Možda ste primijetili da sve više kuhara koje pratite hranu priprema uz pomoć papira za pečenje. Umjesto da škrovadu, skupa s  hranom koja je u nju smještena prekriju folijom, koriste se komadom namočenog i zgužvanog papira za pečenje. Umjesto škartoca za pečenje načinjenog od folije koriste škartoce skrojene od papira za pečenje.

Jedan od razloga za ovakvu promjenu je istraživanje objavljeno u International Journal of Electrochemical Science kojim je utvrđeno da se prilikom pripreme jela koja uključuju zamatanje u foliju komadići folije mogu otopiti i stopiti se s hranom. Neki iznose mišljenje da je pečenje s aluminijskom folijom ipak sasvim u redu pod uvjetom da se ne koriste temperature više od 200 stupnjeva Celzija.

Nažalost, rezultati spomenute studije takav stav ne podržavaju. Prema navedenom istraživanju, folija u hranu može otpustiti čestice aluminija već i kod nižih temperatura, a taj se proces dodatno pojačava kod pripreme kisele hrane. Je li nam onda bolje jela poput ribe u škartocu - koja uključuju i sastojke poput vina, limuna i rajčica, ovisno o receptu - pripremati u škartocu od papira za pečenje?

Evo nove kontroverze. Neki vjeruju kako ni papir za pečenje nije bezopasan, osobito ona njegova glatka strana. Ispušta čestice plastike u hranu, upozoravaju zabrinuto. Sumnjiv im je i zbog toga što se pri njegovoj izradi koriste teške kemikalije.

Ali po svemu sudeći zabrinuti su potpuno neutemeljeno. Tvrdnja o mikroplastici nije dokazana, štoviše u većini slučajeva za sporni glatki sloj koriste se silikoni, a ne plastika. Po pitanju kemikalija, pak, predvladava mišljenje da nema razloga za zabrinutost jer se koriste na samom početku procesa proizvodnje pa do njegovog završetka iščezavaju.

Dok neko novo istraživanje ne pokaže suprotno, slobodno se koristite papirom za pečenje bilo kao podlogom, omotačem ili poklopcem.

Foliju bismo, savjetuje se, trebali oprezno koristiti čak i za čuvanje hrane jer kiselkaste namirnice mogu nagristi aluminij, a osim toga, zamatanjem u aluminijsku foliju ne osiguravamo namirnice od dotoka zraka, što znači da nisu zaštićene ni od bakterija koje mogu uzrokovati kvarenje, ali i trovanje hranom.

Što se pak tiče gore spomenute cake s oblaganjem pećnice folijom, zaboravite i nju. Nema veze sa štetnim kemikalijama nego s pećnicom. Mogla bi se pokvariti.
