Zimi volimo kripna, tradicionalna jela, a volimo i jela s piletinom, stoga nam je ovih dana na jelovniku ćešket. Nikad niste čuli za njega? Onda mora biti da nikad niste bili u Bosni i Hercegovini u vrijeme Božića. Božić je, doduše za nama, ali vani grize za obraze što znači da će nam ovo zasitno, a jednostavno jelo jako dobro prijati.
Tradicionalno se ćešket priprema na Badnjak, a jede na Božić i obično se spravlja od domaće kokoši uz dodatak masnoće koja služi da se jelo za vrijeme dugotrajnog kuhanja ne bi zalijepilo za teću, no u nekim se receptima dodajte tek na kraju, prilikom posluživanja, pomiješana s krušnim mrvicama.

Osim navedenog, koristi se i jedna zdrava žitarica koje se, nažalost, vrlo rijetko sjetimo - mislimo, naravno, na ječam. Pronašli smo i recepte u kojima se koristi pšenica u zrnju, no nju se savjetuje najprije malo istući u mužaru kako se ne bi potkrao kukolj ili kakav kamenčić.
Poanta ovog recepta je u dugotrajnom kuhanju, uslijed kojeg meso postane toliko mekano da se topi u ustima, dok ječam, odnosno pšenica, poprima konzistenciju finog, gotovo jušnog rižota, nalik onome kakav izvorno pripremaju Talijani.
Odlučite li se isprobati kakvog je okusa ovo omiljeno jelo, savjetujemo vam da pokušate nabaviti domaću koku jer okus je neusporedivo bolji. Što se tiče masnoće, obično se koristi janjeći loj, neki vole dodati malo pancete, no poslužit će vam i maslac.
Ćešket
Sastojci:
1 kokoš
400 g ječma
200 g masti ili maslaca
malo vrhnja po želji
sol, papar
Priprema:
Skuhajte pile pa ga očistite od kostiju i vratite u lonac, a zatim dodajte 400 grama ječma ili pšenice koju ste prethodno očistili i isplahnuli kako se ne bi potkrao koji kamenčić.
Kuhajte na laganoj vatri dok se žitarice potpuno ne skuhaju, a meso ne raspadne. Nekoć se ovo jelo kuhalo na špaheru na drva i do 12 sati, no danas se rijetko kad kuha na takav način.
Kad je jelo gotovo, u posebnoj posudi otopite 200 g maslaca i lagano ga pomiješajte s krušnim mrvicama pa tom mješavinom prelijte svaku porciju ćešketa prilikom posluživanja.
Alternativno, maslac, masnoću, loj ili pancetu dodajte za vrijeme kuhanja, smještajući ih na dno lonca. U tom slučaju jelo nemojte miješati nego lonac s vremena za vrijeme protresite.

Zimi volimo kripna, tradicionalna jela, a volimo i jela s piletinom, stoga nam je ovih dana na jelovniku ćešket. Nikad niste čuli za njega? Onda mora biti da nikad niste bili u Bosni i Hercegovini u vrijeme Božića. Božić je, doduše za nama, ali vani grize za obraze što znači da će nam ovo zasitno, a jednostavno jelo jako dobro prijati.
Tradicionalno se ćešket priprema na Badnjak, a jede na Božić i obično se spravlja od domaće kokoši uz dodatak masnoće koja služi da se jelo za vrijeme dugotrajnog kuhanja ne bi zalijepilo za teću, no u nekim se receptima dodajte tek na kraju, prilikom posluživanja, pomiješana s krušnim mrvicama.

Osim navedenog, koristi se i jedna zdrava žitarica koje se, nažalost, vrlo rijetko sjetimo - mislimo, naravno, na ječam. Pronašli smo i recepte u kojima se koristi pšenica u zrnju, no nju se savjetuje najprije malo istući u mužaru kako se ne bi potkrao kukolj ili kakav kamenčić.
Poanta ovog recepta je u dugotrajnom kuhanju, uslijed kojeg meso postane toliko mekano da se topi u ustima, dok ječam, odnosno pšenica, poprima konzistenciju finog, gotovo jušnog rižota, nalik onome kakav izvorno pripremaju Talijani.
Odlučite li se isprobati kakvog je okusa ovo omiljeno jelo, savjetujemo vam da pokušate nabaviti domaću koku jer okus je neusporedivo bolji. Što se tiče masnoće, obično se koristi janjeći loj, neki vole dodati malo pancete, no poslužit će vam i maslac.
Ćešket
Sastojci:
1 kokoš
400 g ječma
200 g masti ili maslaca
malo vrhnja po želji
sol, papar
Priprema:
Skuhajte pile pa ga očistite od kostiju i vratite u lonac, a zatim dodajte 400 grama ječma ili pšenice koju ste prethodno očistili i isplahnuli kako se ne bi potkrao koji kamenčić.
Kuhajte na laganoj vatri dok se žitarice potpuno ne skuhaju, a meso ne raspadne. Nekoć se ovo jelo kuhalo na špaheru na drva i do 12 sati, no danas se rijetko kad kuha na takav način.
Kad je jelo gotovo, u posebnoj posudi otopite 200 g maslaca i lagano ga pomiješajte s krušnim mrvicama pa tom mješavinom prelijte svaku porciju ćešketa prilikom posluživanja.
Alternativno, maslac, masnoću, loj ili pancetu dodajte za vrijeme kuhanja, smještajući ih na dno lonca. U tom slučaju jelo nemojte miješati nego lonac s vremena za vrijeme protresite.
