Konačno smo dočekali ptravo zahlađenje, a to znači da je krajnje vrijeme za ukiseliti kupus. Ne samo da će nam kiseli kupus pomoći da očuvamo zdravlje tijekom zime, nego ćenam biti neophodan za pripremu raznoraznih tradicionalnih jela poput sarmi i arambaša.

Za kiseljenje su najbolje glavice srednje veličine, a pored njih potrebni su sol, voda i plastična kaca. Postupak je vrlo jednostavan, glavice kupusa najprije se očiste od vanjskih listova, zatim im se odstrani zadebljani središnji dio te se u njega ubaci sol. Na taj način pripremljene glavice redaju se u kacu pa se preliju vodom u koju se po potrebi može dodati još soli. 

Pored glavatog kupusa u kacu možete staviti i vrećice sitno narezanog i posoljenog kupusa. Na ovaj način uštedjet ćete prostor i neće biti potrebe da koristite dvije posude, jednu za glavice, drugu za ribanac. Vrećice s narezanim kupusom prethodno je potrebno na više mjesta probušiti, kako bi kroz rupice cirkulirala slana otopina, a zatim ih treba ugurati između glavica, kako bi ispunile prostor.

Kiselom kupusu možete dodati i različite sastojke za poboljšanje izgleda i okusa. Poznati trik za lijepu žutu boju kiselog kupusa je dunja, a u istu svrhu može se koristiti i kukuruz. Okus će nadopuniti lovor, mrkva, jabuka, cikla, ljuta paprika, kopar, mažuran, kim i hren koji ima još jednu ulogu a to je spriječiti kvarenje.

Proces fermentacije traje tri do četiri tjedna u optimalnim uvjetima i pri sobnoj temperaturi, a nakon toga kupus treba premjestiti u hladniji prostor. Dok se kupus kiseli sav kupus mora biti prekriven vodom, a ako kaca u kojoj ga pripremate nije puna do vrha, napunite najlonsku vreću vodom i stavite je kao uteg na kupus, da ga pritišće i ujedno štiti od doticaja sa zrakom. Na takav način zaštićen kupus bolje će se držati od onog na tradicionalan način pritisnut teškim kamenom.

Konačno smo dočekali ptravo zahlađenje, a to znači da je krajnje vrijeme za ukiseliti kupus. Ne samo da će nam kiseli kupus pomoći da očuvamo zdravlje tijekom zime, nego ćenam biti neophodan za pripremu raznoraznih tradicionalnih jela poput sarmi i arambaša.

Za kiseljenje su najbolje glavice srednje veličine, a pored njih potrebni su sol, voda i plastična kaca. Postupak je vrlo jednostavan, glavice kupusa najprije se očiste od vanjskih listova, zatim im se odstrani zadebljani središnji dio te se u njega ubaci sol. Na taj način pripremljene glavice redaju se u kacu pa se preliju vodom u koju se po potrebi može dodati još soli. 

Pored glavatog kupusa u kacu možete staviti i vrećice sitno narezanog i posoljenog kupusa. Na ovaj način uštedjet ćete prostor i neće biti potrebe da koristite dvije posude, jednu za glavice, drugu za ribanac. Vrećice s narezanim kupusom prethodno je potrebno na više mjesta probušiti, kako bi kroz rupice cirkulirala slana otopina, a zatim ih treba ugurati između glavica, kako bi ispunile prostor.

Kiselom kupusu možete dodati i različite sastojke za poboljšanje izgleda i okusa. Poznati trik za lijepu žutu boju kiselog kupusa je dunja, a u istu svrhu može se koristiti i kukuruz. Okus će nadopuniti lovor, mrkva, jabuka, cikla, ljuta paprika, kopar, mažuran, kim i hren koji ima još jednu ulogu a to je spriječiti kvarenje.

Proces fermentacije traje tri do četiri tjedna u optimalnim uvjetima i pri sobnoj temperaturi, a nakon toga kupus treba premjestiti u hladniji prostor. Dok se kupus kiseli sav kupus mora biti prekriven vodom, a ako kaca u kojoj ga pripremate nije puna do vrha, napunite najlonsku vreću vodom i stavite je kao uteg na kupus, da ga pritišće i ujedno štiti od doticaja sa zrakom. Na takav način zaštićen kupus bolje će se držati od onog na tradicionalan način pritisnut teškim kamenom.

Konačno smo dočekali ptravo zahlađenje, a to znači da je krajnje vrijeme za ukiseliti kupus. Ne samo da će nam kiseli kupus pomoći da očuvamo zdravlje tijekom zime, nego ćenam biti neophodan za pripremu raznoraznih tradicionalnih jela poput sarmi i arambaša.

Za kiseljenje su najbolje glavice srednje veličine, a pored njih potrebni su sol, voda i plastična kaca. Postupak je vrlo jednostavan, glavice kupusa najprije se očiste od vanjskih listova, zatim im se odstrani zadebljani središnji dio te se u njega ubaci sol. Na taj način pripremljene glavice redaju se u kacu pa se preliju vodom u koju se po potrebi može dodati još soli. 

Pored glavatog kupusa u kacu možete staviti i vrećice sitno narezanog i posoljenog kupusa. Na ovaj način uštedjet ćete prostor i neće biti potrebe da koristite dvije posude, jednu za glavice, drugu za ribanac. Vrećice s narezanim kupusom prethodno je potrebno na više mjesta probušiti, kako bi kroz rupice cirkulirala slana otopina, a zatim ih treba ugurati između glavica, kako bi ispunile prostor.
