Sol, papar, senf, lovor, crvena paprika... sve će to poboljšati okus mesnih jela, ali ako ga želite podići na sasvim novu razinu, morat ćete posegnuti za jednom osobitom mješavinom začina. Srećom, ne morate kupovati sve komponente, prodaje se gotova. ŽI ne mislimo na onu poznatu mješavinu koju je nekoć reklamirao Stevo Karapandža. Ova dolazi s druge obale Mediterana. Afričke.
Sjevernoafričku kuhinju definira raznolik raspon mješavina začina, a jedan od najpoznatijih je Ras el Hanout. U doslovnom prijevodu s arapskog taj naziv znači "šef radnje", ali također znači i "najviša polica", a oba značenja dosta dobro opisuju o čemu je riječ: o izboru ponajboljih sastojaka iz trgovine začinima i njihovoj specifičnoj mješavini. Nastao je na području današnjeg Tunisa, Alžira i Maroka, a ima poduži popis sastojaka: od ružinih pupoljaka i lavande preko klinčića i kardamoma do korijena irisa i, ponekad, afrodizijaka poput "španjolska mušice". Smatra se da je Ras el Hanout jedna od najsloženijih mješavina začina na svijetu, a kako u nekim varijantama sadrži i do 80 različitih začina, nije riječ o pretjerivanju.
Od grada do grada, od tržišta do tržišta i od kuhinje do kuhinje, nijedna mješavina Ras el Hanouta koju probate neće biti ista. Međutim, taj element personalizacije samo dodaje privlačnosti mješavine začina. Dok većina Ras el Hanout mješavina ima bazu od crnog papra, bijelog papra, cimeta, muškatnog oraščića, pimenta, anisa, klinčića, đumbira, kumina, korijandera, kajenske paprike, kurkume i sumaka, ovisno o tome gdje se nalazite i tko ga pravi, količina bilo kojeg od tih sastojaka može jako varirati ili ih se može zamijeniti drugim začinima.
Ras el Hanout djeluje fantastično u jelima kao što su mesne okruglice od janjetine ili govedine, izvrstan je dodatak marinadama, kao i jelima od mesa koja se pripremaju na roštilju ili u pećnici, dok kuhanim mesnim jelima daje posebnu dubinu i kompleksanost okusa. Sjajno se "ljubi" s divljači, a pogodan je i za namirnice poput tofua i gljiva, a dobar je dodatak pečenom povrću - pomiješajte ga s malo maslinovog ulja pa tom smjesom premažite povrće prije pečenja.

Sol, papar, senf, lovor, crvena paprika... sve će to poboljšati okus mesnih jela, ali ako ga želite podići na sasvim novu razinu, morat ćete posegnuti za jednom osobitom mješavinom začina. Srećom, ne morate kupovati sve komponente, prodaje se gotova. ŽI ne mislimo na onu poznatu mješavinu koju je nekoć reklamirao Stevo Karapandža. Ova dolazi s druge obale Mediterana. Afričke.
Sjevernoafričku kuhinju definira raznolik raspon mješavina začina, a jedan od najpoznatijih je Ras el Hanout. U doslovnom prijevodu s arapskog taj naziv znači "šef radnje", ali također znači i "najviša polica", a oba značenja dosta dobro opisuju o čemu je riječ: o izboru ponajboljih sastojaka iz trgovine začinima i njihovoj specifičnoj mješavini. Nastao je na području današnjeg Tunisa, Alžira i Maroka, a ima poduži popis sastojaka: od ružinih pupoljaka i lavande preko klinčića i kardamoma do korijena irisa i, ponekad, afrodizijaka poput "španjolska mušice". Smatra se da je Ras el Hanout jedna od najsloženijih mješavina začina na svijetu, a kako u nekim varijantama sadrži i do 80 različitih začina, nije riječ o pretjerivanju.
Od grada do grada, od tržišta do tržišta i od kuhinje do kuhinje, nijedna mješavina Ras el Hanouta koju probate neće biti ista. Međutim, taj element personalizacije samo dodaje privlačnosti mješavine začina. Dok većina Ras el Hanout mješavina ima bazu od crnog papra, bijelog papra, cimeta, muškatnog oraščića, pimenta, anisa, klinčića, đumbira, kumina, korijandera, kajenske paprike, kurkume i sumaka, ovisno o tome gdje se nalazite i tko ga pravi, količina bilo kojeg od tih sastojaka može jako varirati ili ih se može zamijeniti drugim začinima.
Ras el Hanout djeluje fantastično u jelima kao što su mesne okruglice od janjetine ili govedine, izvrstan je dodatak marinadama, kao i jelima od mesa koja se pripremaju na roštilju ili u pećnici, dok kuhanim mesnim jelima daje posebnu dubinu i kompleksanost okusa. Sjajno se "ljubi" s divljači, a pogodan je i za namirnice poput tofua i gljiva, a dobar je dodatak pečenom povrću - pomiješajte ga s malo maslinovog ulja pa tom smjesom premažite povrće prije pečenja.
